Locally grown Damson plums have been hand-picked around Melbourne and then steeped in dry gin for 6 months.
We then cook the ginny plums into a preserve that is fabulous along-side pates, terrines, a cheese platter or even thickly spread on hot buttered toast!

We've added only a tiny amount of sugar to balance the astringency of the fruit but keep their charactaristic tart flavour.
