Tonic Scones

Fancy a boozy tea party? Try serving these scones with a cocktail or
Suburban G&T instead of a cuppa. 

 

Makes one dozen small scones.

 

375gm plain flour
1 Tablespoon baking powder
150ml cream
150ml tonic water
50gm caster sugar
pinch of salt

Jam + cream for topping

 

Preheat oven to 180 degrees Celsius.


Gently combine all ingredients to form a soft dough and cut into rounds on a floured bench. Sprinkle with flour or brush with milk depending on your preference (we know this is a hotly debated topic just like what goes on first – the jam or cream?) and bake on a lined tray for approximately 15 minutes. Top with cream and your favourite preserves (we like blackberry).
