Makes 1 cocktail

 

45ml Suburban Gin please link to shop
15ml Absinthe
10ml fresh lemon juice
6 fresh mint leaves
2 bar spoons (teaspoon) caster sugar
tonic water to top up glass

 

Muddle sugar and mint leaves (reserve a pretty one to garnish with) in a highball glass then mix in lemon juice, absinthe and gin and top with chilled tonic water and ice if desired.
